Today I am going to share with you how I made my first self made feta cheese made with cow milk. Feta is normally made with goats milk but it is hard to get goat milk here in China so I am making a cow milk based Feta chees instead. As an avid reader of my blog you sure remember the last time when I made my own curd cheese / sour cream. Now making cheese is not much different than that. Especially the Feta cheese is very easy, once you managed to make your own curd cheese. We remember that at some stage we had the curd cheese in the towel and let the liquids pour out so we are left with the curd cheese. in order to make the Feta cheese, we will simply continue to press the rest of the liquid out of the cheese so it will be completly dry.

There is a bunch of ideas out there, forms and presses which I don't have. I took a towel, wrapped the cheese in it and put the towel in a plastic bowl that I perforated with holes on the bottom so the liquid can drip out. Then I put a weight (my dumbells) on top of this in order to press out the liquid. You should put up a weight up to 10 kg.

Then you turn the cheese every 30 minutes 3 or 4 times to press out almost every last drop of liquid from the cheese. Now it is time to prepare the salt solution. We take about 50 g of salt to 100 g of water, cook everything up so the salt is completely dissolved in the water. This we put in a container and immerse the cheese in this solution. We do that as the salt solution will draw out the last of the liquids from the cheese and the cheese will be completely dry thereafter.

You can break the Feta already in cubes so you have the typical Feta serving, also the slight salty taste that Feta normally has will be in this cheese. If you have and if you want, you can keep the Feta in an oil solution after immersing the cheese for a few days in the salt solution.

Now you can enjoy your cheese on a bread or in a Greek salad.

  3. Do take your time when you check it out, there is HUNDREDS of awesome breads. I only managed to check a few of them yet (like yours for example). And thanks a lot, I am just one among a bunch of crazy bread loving enthusiasts, ain't I?
    For the cheese, just follow the recipe for the curd cheese and then take if from there. It's really easy, don't need to work a lot, just got to have some time left...

  4. Zum Glück kann ich hier guten Schafs-Feta kaufen, ich glaub für Experimente dieser Art fehlte es mir an der Zeit. Andrerseits, wäre ich in deiner Situation würde ich wohl auch, zu sehr mag ich Milchprodukte aller Art. Und mit deinen Anweisungen kriegt man das bestimmt gut hin!

  5. Ja, das ist in der Tat ein Glück, ich wünschte ich müsste es nicht machen. Aber es fehlt mir wirklich schon sehr an Milcherzeugnissen und so schwer ist das alles gar nicht zu machen. Aber einfacher wär es natürlich schon, gelle?
