Almond apply crumble pie

Here is a kind of a new cake that I created, based on two of my favorite cakes. One is a french "galette des rois" (king cake), an almond based cake that is traditionally baked for the occasion on Epiphany, January 6.th. The other one is the apple crumble (refer to the recipe here). As apples and almonds go very well together (IMHO), I decided to create a cake that would combine the both of the tastes together so i can have both of my favorite cakes in one. And I am highly satisfied with the result indeed. So here goes the recipe, should you want to recreate this cake as well.


The dough
  • 1 egg
  • 70 gram sugar
  • 100 gram unsalted butter
  • 200 gram flour (I took rye flour)
  • 1 tip of the spoon of baking powder 
Mix all the ingredients together, knead them well until you have a consistent ball of dough. Put the dough ball in the fridge for about 30 minutes. Get them out of the fridge, roll it out with a rolling pin and lay out the bottom and the sides of the baking form.

Almond filling
  • 200 g grated almond « powder «

  • 110 g sugar
  • 2 eggs
  • 100 g of soft butter
  • 2 table spoons of amaretto
Mix the sugar, the eggs, butter and the amaretto well together until they are a blend paste, then slowly pour the grated almonds in the mix and continue to mix until you got a smooth almond paste.

Apples
  • 4 apples
  • 5 table spoon of (brown) sugar
  • 3 table spoons of brown rum
Peel the apples and cut them in the middle, take out the grains and the hard core. Then cut the apples into thinner slices. Now put a bit of butter in a pan, sprinkle the brown sugar in and let the sugar dissolve with the butter. Then add the apples and let the sugar butter mix coat them will cooking them on low heat, now add the rum and let everything simmer on low heat for a while till the apples turn a bit soft but still have a bit of crunch left inside. Take them off the heat now.

Crumbles
  • 300 g flour
  • 125 g sugar
  • 200 g butter
  • a few drops of vanilla aroma (the real stuff made from vanilla pods)
  • 1 table spoon of cinnamon
For the crumbles, just mix all the above ingredients by hand together until you got the crumbly mixture.

Now, all you have to do is just simply lay out the cake. First add the almond past on the dough

Now you pop the cake in a preheated oven at 180 degrees Celsius. Bake the cake for about 45 - 50 minutes, until the crumbles on top of the cake are golden brown and the inside of the cake is baked well through.
