Mango cheescake - happy biirthday, again...

Another week end, another b'day. After my last cake baking session I got a series of request to make more cakes. Am I going to stall my cooking and focus on baking? I remember when I was young, once I told my mom that I would like to be a cake maker when I grow up. Is it happening to me now? No it isn't. But this one is a special request. This cake is for you NG. I wish you the best for another successful year, the best for your future career, hang in there and you will see that better times will come to you, hopefully soon. Here is your cake - mango cheesecake. Enjoy watching it whily somebody else is already digging in :) heheh
So and if you want to bake it, here is the recipe for you:

The dough:
  • 1 egg
  • 70 gram sugar
  • 100 gram unsalted butter
  • 200 gram flour (I took rye flour)
  • 1 tip of the spoon of baking powder

The main filling:
  • 1 big mango
  • 5 eggs
  • 150 gram of brown sugar
  • 500 gram sour cream
  • 250 gram cream cheese
  • 250 ml milk
  • 1 pack vanilla pudding powder (or you can also put the ingredients for the fresh pudding if you don't have pudding powder where you live)
  • 2 Table spoons of flour

Topping 1:
  • 3 egg white
  • 1 cup of the above main filling (without the mango of course)
  • 1 pinch of salt
  • 3 table spoon of sugar

Topping 2:
  • 50 gram sugar
  • 1 Table spoon of honey
  • 2 Table spoon of Amaretto
  • 100 gram of almond laminates

Preparation:
Make the short pastry but mixing all the dough ingredients together. Prepare a baking form, butter it out, spread the dough inside and put it in the fridge until that other things are ready.
Cut the mango in cubes and put to the side. Now beat the eggs with the sugar until the sugar dissolves. Then add the fresh cheese, sour cream, flour and pudding powder (or the ingredients for the fresh pudding - without the milk mentioned in this recipe) and the milk. mix everything well together to get a silky smooth mixture with a healthy orange color.Put a cup of the mix by the side for the later topping.
Now start and preheat the oven to 180 degrees Celsius.
Now put the mango cubes on the short pastry.

 Now pour the main filling over the mango cubes. Don't worry the filling is very liquid at this stage.

Put everything in the preheated oven and bake for 45 minutes. 
After 40 minutes cook up the honey and the sugar from the topping Nr. 2 in a saucepan, when the mass is liquid, add the amaretto stir in and add the almond laminates. switch off and put by the side. Now, beat up the egg white, the salt and the sugar until it is a stiff and hard. Then very carefully fold in the cup of the main mix.
Take the cake out of the oven, put the egg white topping on top of the cake and put the almonds on top and place the cake bake in the oven. Bake for another 10 - 15 minutes and watch the upper heat of your oven so your cake will be less dark then mine. Then switch off the oven and open the door to let the heat go out slowly, but LEAVE THE CAKE INSIDE. This is very important. If you take it out now, the cake will collapse and not look nice. But if you leave it in and let it gets slowly cold, the cake will stay nice and in form and will not collapse in the middle. Now you can add some powder sugar coating on top if you like.

  7. @ NG: Haha I don’t think my mom reads this blog. Next time I might show here. But honest to god? I think that my mom easily humbles me with every single meal she cooks, so the only one that should be impressed is us, by her cooking. Yes you cannot taste but let me tell you, the combination rocks and the cheese filling is so light and fluffy, not too heavy and so full of nice flavor… :)

    @ Rose: Bring a cheesecake? I think it won’t get out alive from the suitcase hehe. I might bring a bread next time, would that be ok instead of a birthday cake for you? Artisan birthday bread? haha
