As I urgently needed some sauce to go along with my recent poppy seed Strudel, I quickly was whipping up a vanilla sauce recipe. As I am using the egg white leftover of the recipe and beat it carefully under the sauce, i actually call this recipe vanilla "snow" and not vanilla sauce, you can see the reason why on the picture and you can taste it as well. Also by adding a bit of ground clove, i get a more interesting taste with a bit of a surprise, it just goes so well with the vanilla, try it you will see...





Vanilla "snow" sauce
  • 3 egg yolk
  • 2 table spoon sugar
  • 2 table spoon vanilla sugar (I make my own vanilla sugar by mixing my empty fresh vanilla pods with sugar and infusing everything for a few weeks)
  • 1 table spoon starch
  • 375 ml milk
  • 1 vanilla pod
  • 1/2 tea spoon of ground clove

Mix the egg yolk, the sugar, the starch, the ground clove and the vanilla sugar together untill you got a consistent cream Now add the mild and the mark of the vanilla pod and heat it up on a small flame. Don't let it cook, just let it simmer for a while until all turns into a thick and creamy sauce.Switch the fire off. Take the egg whites and beat them stiff. Then, carefully, with a big spatula, fold the egg white in the sauce so you will get this silky smooth, creamy, fluffy vanilla "snow". sauce that just tastes fantastic with a hint of the spiciness of the clove in the background, it's a heavenly "snowy" kind of an afternoon delight...
